Apples and Spice



It's almost Thanksgiving, are you all ready? I'm always interested in what people are making. Ham or turkey? Stuffing or dressing? Cranberry sauce- fresh or jellied? Pumpkin or pecan? There are so many different foods, I want a buffet table so I can sample everything! What's on your Thanksgiving menu? Our family does Holiday gatherings pot-luck style so not everyone has to do the work on heir own. Less stress that way. I'm in charge of a side dish and chocolate pecan pies this year. 

I baked my cake in my Autumn Harvest Bundt that my hubby gave me years ago. It's such a pretty pan, but the detail didn't show up as much as I hoped it would. I'm thinking a pound cake would do well in a pan like this, with a light dusting of powdered sugar. 

If you like spice cake, you might like this cake. It was really moist and spicy. A little too spicy for me, if I'm being honest, but if spice is your thing you'll like this. In this applesauce cake was lemon zest too, which was a nice addition. It brightened the flavor and helped cut through the spice. If I made this again, I'd leave out the allspice all together, cut the amount of nutmeg in half and add more chopped apples. The glaze though, was delicious! I could eat the glaze straight out of the bowl with a spoon. Below is the recipe for the cake, as I made it.

Apple Sauce Spice Bundt Cake 

  • 2 1/4 cups sifted unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup pecans, lightly toasted finely chopped (optional)
  • 1/3 cup butter, room temperature
  • 1 teaspoon grated lemon zest
  • 1/3 cup vegetable shortening
  • 3/4 cup granulated sugar
  • 2/3 cup light brown sugar, lightly packed
  • 2 large eggs
  • 1 medium sized Granny Smith apple, peeled and diced, about 1 cup
  • 1 teaspoon vanilla extract
  • 1 cup applesauce
Preheat oven to 350 degrees F. utter a 9" fluted tube pan, dust it lightly with flour and invert over the kitchen sink to tap out excess flour.

Sift together flour, baking soda, salt and spices in a triple sifter. Stir in chopped pecans, if using. Set aside.

Place the butter and shortening and lemon zest in large bowl of an electric mixer fitted with the beaters or paddle attachment. Beat over medium-high speed until creamy and smooth, about 2 minute. 

Add the granulated sugar, 1 tablespoon at a time, taking 3 to 4 minutes to blend it in well. Add the light brown sugar over an additional 3 to 4 minutes. Scrape the sides of the bowl occasionally.

Add the eggs, one at a time until well blended. Reduce speed to medium-low. Add the fresh apple and the vanilla. 

Reduce mixer speed to low. Add the flour/nut mixture alternately in three additions with the applesauce in two additions, starting and ending with the flour. Beat just until incorporated after each addition. Scrape the sides of the bowl occasionally.

Spoon the batter into the prepared pan and smooth the top. Center the pan on the rack and bake in the preheated oven for 35 to 40 minutes or until the cake begins to leave the sides of the pan and a toothpick inserted into the center comes out clean.
Remove from oven. Place the pan on a cake rack to set for 10 to 15 minutes, then invert the cake onto the rack and remove pan. While the cake is still warm you may want to pour Brown Sugar Glaze over the top, letting it drip naturally down the sides. Garnish the top with chopped pecans if you wish.


Brown Sugar Glaze
  • 3 Tablespoons butter
  • 3 Tablespoons brown sugar, packed
  • 3 Tablespoons heavy cream
  • 3/4 cup sifted powdered sugar
  • 1/2 teaspoon vanilla
In a small saucepan, melt the butter with the brown sugar over low heat. Then stir in the heavy cream and cook slowly until the mixture comes to a gentle boil. Simmer for 1-2 minutes.

Take the pan off the heat and gradually add the powdered sugar in three additions, whisking until smooth. Add in the vanilla and whisk to combine. 

If the icing is too thick, add another tablespoon of the cream. You want it thin enough to pour but not runny. It sets quickly so get it on the cake as quickly as possible.

Hayden's 2nd Birthday- A Radio Flyer Tricycle Party


My sweet little mischievous boy turned two years old in September. We celebrated with a Radio Flyer red tricycle themed cake and party. I like themed parties but I'm not one to purchase character cups, plates, banners and tablecloths- that's just not my style. So I made a fondant covered tricycle cake, and chose solid red and turquoise accents to bring it all together.  Read on for more details.


I wanted to incorporate some of Hayden's favorite things at his party, which just happened to include cake, cookies, lemonade, milk, hot dogs with ketchup, pretzels and cheese. I made a bunting banner to hang over the table using patterned scrapbook that read "Happy Birthday Hayden". I also set up a lemonade stand and made a bunting for that that said "Lemonade 5 cents" I used this bunting template and Baker's twine to hang it. I loved how they turned out. So much so that I still haven't taken them down :-)

For the buffet I served: 

  1. Hot dogs with mustard and ketchup (served out of a Radio Flyer wagon)
  2. Tortilla chips and pretzels
  3. Veggies with ranch dip
  4. Cheese cubes
  5. Birthday cake (chocolate cake with vanilla buttercream covered in Marshmallow Fondant)
  6. Brown butter and spice rice krispies treats
  7. Fresh fruit cups
  8. Decorated sugar cookies and red and aqua Sixlets
  9. Whole and 2% milk served in glass Frappuccino bottles
  10. Raspberry and regular lemonade
My wonderfully talented friend, Kathia from Pink Little Cake, made the tricycle, cat and star Hayden decorated sugar cookies for me. If you haven't been to her blog, go check her out. She does amazing work. She also made the cute little scalloped tags that I used on Hayden's party favors which included Cheez-its, fruit snacks, raisins, and a drink mix.  My friend Becky from Goods by Gert custom made the letter H for me. I ordered Hayden's "two" shirt from Best Birthday Ever shop on Etsy. Thank you Kathia and Becky!




This was my first time covering a cake in fondant, though I have worked with fondant before. I was a little worried, but in the end it turned out great and the fondant I used was really forgiving. Any mistakes I made, I was able to cover up with a cloud or the green grass. This was really fun to make and this colors were so bright and vibrant. The actual fondant was quite tasty too. 


It was a great day shared with close family and I'm so grateful to have had my Dad and step mom there to celebrate with us along with. Hayden is a truly blessed boy.

Hayden Eats: The Sequel

When Hayden turned 6 months old, he got his first taste of solid food and I documented and shared it HERE. Well today I'm sharing with you a few snapshots of my little stinker eating momma's creations. I've been super busy trying to get all the cookbook baking and photographing done. I have less than three weeks to complete everything. In the meantime, my boy has a mouth full of teeth and he's putting them to good use. 


I think it's funny that he takes bites of stuff I'm photographing. I'll be taking a picture of a beautifully plated slice of cake, then all of a sudden a little hand will appear in my window frame, followed by "mmm mmm". He doesn't think I can see him on the other side of that lens. 

"I don't need a fork. I got this."

"WHAT?!" 

"I didn't do it."

He LOVES turning on the mixer. He pushes the kitchen chair over to the island and turns it on and off, on and off then starts laughing. It's kind of funny til he drops stuff into the bowl full of creamed butter. 

The other day I heard movement in the kitchen, followed by sounds of a moving chair. I walked into the kitchen to find him sitting on my cake plate on the kitchen table, grinning ear to ear. The boy is a comedian. By the way, when did my baby turn into a toddler. Dang!

Hayden drives me crazy at times, he opens the dishwasher, stands on the door and pulls out dirty dishes. He opens the pantry grabs the maple syrup and spills it all over himself. He tries to eat ketchup, marshmallows and Old Bay seasoning on a daily basis. He's figured out how to work the microwave, insists on helping open the oven (with a hot pad in hand) and tries to sit in the refrigerator every time I open it up. His helping isn't always helpful but I wouldn't have it any other way. I am so grateful for those precious moments and I realize how much he learns every single day and how independent he is and that makes me proud.


And no matter how frustrated I get at him or his messes, I look at this face and I melt, then I laugh because I realize he has Cool Whip in his hair. I am wrapped around this beautiful boy's sticky fingers and toes.

Insanely Great Waffles and Easter Weekend



We had a great Easter weekend. We celebrated a few birthdays, dyed eggs, took some pictures in a field of bluebonnets, I baked and cooked til I fell into bed and we had an Easter egg hunt. This was Hayden's second Easter but the first time he was big enough to get involved. I got him a puppy basket and filled eggs with yogurt raisins and m&m's. He also got a new toothbrush and toothpaste which he LOVES. He could brush his teeth all day long if you let him. He had so much fun hunting eggs and crushing cascarones in the backyard, that my aunt and uncle brought over. 

This year for Easter, my grandparents were in town so the family gathered and we had brunch. I made a lemon tart, a strawberry cake, a breakfast casserole, wrapped up Cowboy cookies as favors and whipped up a quintuple batch of these waffles. I usually make yeasted Belgian waffles but these are much quicker to prepare and just as delicious. I made them the night before, froze them, then reheated them in the oven just as the guests arrived. It saved a ton of time and everyone got piping hot waffles. The only thing missing was the fried chicken!  


Waffles of Insane Greatness from Food Network

  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup whole milk or buttermilk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/2 teaspoons sugar
  • 3/4 teaspoon vanilla extract

In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.

Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately.

Serves 3-4 

NOTE: The waffles will vary in size depending on your waffle maker. I have a Belgian waffle maker that produces thick waffles. This recipe makes 6 squares of waffles. I often double or triple the recipe and freeze the leftovers for a quick breakfast during the week. 

Buttered Pecan Syrup from Monica H
  • 1 cup chopped pecans
  • 1/4 cup butter
  • 1/3 cup maple syrup
  • 1/2 teaspoon vanilla
In a small saucepan, combine pecans, butter and syrup. Bring to a boil, then simmer for 10 minutes on low heat. Just before serving, stir in vanilla extract. Pour over waffles, pancakes, or ice cream. 

Serves 4

An Exciting Announcement

Hi Everyone, 

I've been MIA lately on my blog, but I am baking. I'm baking a lot actually. In December, I signed a contract  with Skyhorse Publishing to write my own cookbook. I am so very grateful for the privilege because I know many people work their butts off for an opportunity like that, and here it was just handed to me. Yes, I have worked hard on this blog to get where I am and I know I am deserving, I just don't want to take this experience for granted. I have a humble heart and I am so appreciative that the people at Skyhorse believe in me and have faith in my abilities as a self taught baker. That being said, I wouldn't be where I am without each and every one of you and all the encouragement and support that comes my way. 

My blog has changed over the years and I went from taking pictures of food at night, with the flash on to using props and daytime lighting and pretty linens. I strive to be better and I try to not only make the food look appealing, but more importantly taste good. I want what I put out on this blog to be achievable and something that you can be proud to serve your friends and family. That is my ultimate goal. With that in mind,  I will do my very best and put all those efforts into the cookbook. I am on a time crunch and I'm baking and photographing about 3 recipes a week. I'm tired y'all and I've only just begun. It's a good tired though and I welcome the challenge. I will try and post as often as I can on Lick The Bowl Good, but please bear with me  as I may be scarce at times. 

I wanted to share with you a few photos today. I baked two pies yesterday- one to be photographed and another to be hacked into pieces, until I found the perfect slice! Some might say, I'm somewhat of a perfectionist. :-) Who wants a piece?!

Playing Catch Up With Lots of Random Photos

I was going to share with you my top recipes of 2012 but I haven't gotten my act together and compiled that list yet. Instead I thought I'd share some pictures that I've taken over the last couple months of recipes that I've made, sunsets from my backyard and a few pics of Hayden thrown in for good measure. And a caterpillar- can't forget him! Sound good? Here we go!

I photographed this breakfast casserole for a holiday magazine. This time I made it with ham and cheddar. Looks good enough to eat! One of my favorite casseroles to eat for breakfast, lunch or dinner. 



This boy loves marshmallows and steals them out of the pantry every chance he gets. This particular time, it was for breakfast. Busted!

I made this pecan cheesecake pie for Thanksgiving but never got around to taking any more photos of the completed pie, then it all got eaten and there was nothing to take pictures of. It's a pecan pie with a layer of cheesecake filling in it. It was yummy served cold!

I searched high and low for the perfect pumpkin pie recipe. My brother absolutely loves it and every year he buys several pies from a BBQ restaurant here in town. To be honest they're really not that good. They're kind of dry and bland so I made sure to make an extra special pie for him. And you know what? It was delicious and spicy and creamy and tender. One of the best pumpkin pies I've ever eaten, actually. My brother said it was good but immediately followed it up with a criticism. That's pretty typical. Come to find out, he likes cheesecake and pumpkin pie to be hard and dry in texture. That's his personal preference, but if you like smooth and creamy and spicy pumpkin pie with a special ingredient, this pie is for you!

I made these for Christmas as plate decorations for the neighbors to go along with their Christmas cupcakes. I also had a few with cocoa. :-) These are so easy to make. Just like your pan with wax, parchment or a Silpat. Put your mini candy canes together to form hearts, fill with melted chocolate and sprinkle with non-pareils. Allow to set up at room temperature and you're done. 

 



Didn't have time to get family photos done this year, so I took some of Hayden by himself in from of the tree to use on our Christmas card. He's a pretty handsome guy, if I say so myself!




Here we are Christmas morning, before opening gifts. I set the time on the DSLR and kept running back and forth to make sure the lighting and composition were set up correctly. About 50 pictures and a not-so-amused-husband later, I realized I didn't even bother to brush my hair. Oh well. Merry Christmas!

And lastly, my Aunt Mary's Sugar Cookies. Made with powdered sugar instead of granulated so they're extra tender. These really aren't the kind you top with icing, but they're still fun to decorate with colored sugar and sprinkles. I make these every year with different cookie cutters.
