Spring Bouquet For Mother's Day


I bought these tulip cupcake liners about 3 years ago with the thought that I would make some really pretty Mother's Day cupcakes and that just never happened. Life got in the way, there were other recipes requested and then I misplaced the liners until recently when Hayden was pulling my baking supplies out of a cabinet and playing with them in the living room :-). When Pillsbury® sent me some samples of their new bold Funfetti cake and cupcake mixes, I knew the yellow would be perfect for Spring cupcakes. Sometimes, life just works itself out and things fall into place.




My second mom, Olivia, gave me this Pillsbury Poppin' Fresh doll when she came to visit for Easter. He was the perfect little helper and inspiration in the kitchen and he's just so cute, don't you think? I think he'd approve of my use of  bold Pillsbury flower cupcakes. I'm kind of funny about colored mixes and drinks- I want the flavor to reflect the color so I added some bright lemon zest and juice to the batter along with buttermilk for some extra tang and to provide maximum moisture. So not only do they look like Spring, they taste like it too! The neon pink Funfetti icing was the perfect compliment to the pop of yellow underneath. 


These cupcakes are fun and worthy of a celebration, but they're easy enough that you don't have to stress about making them. They can be decorated any way you want, these flowers are just an idea but you can get more inspiration by visiting Pillsbury on Facebook, PillsburyBaking.com and Pillsbury on Pinterest. Lemon Buttermilk Flower Cupcakes

  • 1- 8.25 oz. package Pillsbury Funfetti Neon Yellow Cake Mix
  • 2/3 cup buttermilk
  • 1/4  cup vegetable oil
  • 1 large egg
  • 1 Tablespoon lemon zest
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Line cupcake tin with paper liners and set aside. 

Place all ingredients in a large bowl and beat with a hand mixer until batter is smooth and creamy and no traces of cake mix remain. 

Evenly divide the cake mix between the paper liners, filling them no more than 2/3 full. 

Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. 

Makes 10-12 cupcakes, depending on size. 

Once cupcakes are baked, allow them to cool in pan for five minutes before removing them to a wire rack to cool completely. 

For the Frosting: 

Transfer your favorite colors of Pillsbury Funfetti frosting to a piping bag fitted with your favorite icing tips and decorate the tops of the cooled cupcakes to resemble flowers. Use the sprinkles and colored sugar that come with the frosting to bring your cupcake flowers to life!

Store cupcakes at room temperature, in an airtight container.

Fall, I Welcome You



A few months ago I was asked by Pillsbury® if I'd like to sample and review their new Spring/Summer flavors of Orange Creamsicle, Key Lime and Funfetti products. I wrote about them here and here, if you're interested. Well today, I'm enthusiastically sharing with you Pillsbury's new Fall line of Caramel Apple and Pumpkin cake and cookie mixes...and they are quite tasty! 

Vintage bakeware is the best!
Living in central Texas means that it feels like Summer for at least 8 months out of the year. It will more than likely be around 80 degrees until November and while it may not look or feel like Autumn outside, Fall is happening in my kitchen. When the season arrives, I like to start baking with apples and spices then I later progress to one of my favorite flavors, pumpkin!



My friend Ingrid from 3B's has made a cake with yellow cake mix called Cinnamon Roll Cake. This is a twist on that recipe using Pillsbury's Caramel Apple Premium Cake mix and frosting. I upped the apple flavor by adding cinnamon applesauce in place of some of the oil and used the caramel apple frosting to make the glaze. If Ingrid's cake tastes like a cinnamon roll, this tastes like a cinnamon apple fritter. The cake itself was very moist and apple-y (is that a word?) with a slightly crunchy caramelly sugar topping. The glaze is completely unnecessary, but it's so tasty you won't want to skip it.

Caramel Apple Fritter Cake from Lick The Bowl Good 
loosely adapted from 3B's and Jolts &Jollies


Cake: 
  • 1- 15.25 oz. box Pillsbury Caramel Apple Premium Cake Mix
  • 4 large eggs
  • 1/2 cup oil
  • 1/3 cup sour cream
  • 3/4 cup cinnamon applesauce

Topping: 
  • 1 cup light brown sugar
  • 1 Tablespoon ground cinnamon

Glaze: 
  • 1/2 cup Pillsbury Creamy Supreme Caramel Apple Frosting
  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla extract

Preheat oven to 325 degrees F. Spray a 9x13-inch OR two 8x8-inch pans with non-stick baking spray with flour and set aside. 

In a large bowl combine the ingredients for the cake and mix until well blended. Pour the batter into the prepared pan and set aside. 

In a small bowl, mix the brown sugar and cinnamon together and sprinkle evenly over the batter. Using a butter knife swirl the brown sugar mixture gently into the batter. 

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. 

Once the cake is fully baked, place on a cooling rack and make the glaze. 

In a small bowl, whisk the frosting, milk and vanilla together until thin, free of lumps and is drizzle consistency. Using a spoon, drizzle the glaze over the cake and allow the cake to cool for at least 20 minutes before serving.

Chocolate and Roses



 There are so many ways to frost a cake. You can spoon it on, schmear it on with a butter knife, you can create swirls and dips with the back of a spoon, you can create an ultra smooth exterior and you can pipe it on. I'm a big fan of super smooth frosting- it's the perfectionist in me that gets all giddy by flawless buttercream :-) I generally only pipe frosting when I'm doing a border on a cake or when decorating cupcakes. But I've wanted to try the piped "rose" look on a cake for awhile and I finally had the opportunity to. It's so easy!


I used a Wilton 2D tip to pipe this. I use this one the most because it makes great flowers and ruffles depending how much pressure you apply. This was my first time trying this so it's not perfect but this technique is good for hiding flaws too. You can go to Bella Cupcakes for a step-by-step on how to do this. 

I made a Devilishly Moist Chocolate Cake recommended by my friend Paloma and covered it in Berry Buttercream. The recipe for the cake is below, but you'll have to get my cookbook if you want the mixed berry buttercream recipe :-) You can use any buttercream recipe you want though to create the swirled roses on this cake or any other cake or cupcakes. Though I have to say, this cake was really good (and stayed moist for several days)!



Devilishly Moist Chocolate Cake 
slightly adapted from The Cake Book by Tish Boyle via Food.com

  • 1 1/3 cups all-purpose flour
  • 3/4 cup natural cocoa powder (not Dutch processed)
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 2/3 cups sugar
  • 1/3 cup oil
  • 2 large eggs
  • 1/3 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 cup boiling water


Position oven rack in the center of the oven; preheat oven to 325°. Grease bottom and sides of a 9x3 inch round cake pan; dust the pan with flour and set aside.

Sift together the flour, cocoa powder, baking powder, baking soda, and salt the bowl of an electric mixer. Add the sugar, and using the paddle attachment, mix at low speed until blended.

Add the oil and mix a few seconds, until the dry ingredients are crumbly.

In a small bowl, whisk together the eggs until blended.

Whisk in the milk and vanilla extract until blended.

With the mixer at low speed, add the egg mixture to the flour mixture and mix until blended, scraping down the sides of bowl as needed.

Gradually add the boiling water and mix just until blended and smooth; scraping down sides as needed.
Pour batter into cake pan.

Bake for 45-55 minutes, until a pick comes out clean.

Cool in the pan on a wire rack for 20 minutes.

Invert cake onto the wire rack and cool completely. Frost as desired.

Makes 1 9-inch round cake

Pillsbury Funfetti Celebrates 25 Years! (Giveaway Closed)



It's party time- the cake we all know and love is having a birthday!  Pillsbury's Funfetti is turning 25 this year and is celebrating in a bold and colorful way. When I think of birthdays, I immediately think of cake and Pillsbury Funfetti has us covered with their Funfetti Premium Cake and Cupcake Mix and four new frosting colors- Aqua Blue Vanilla with fish shaped candy bits, Hot Pink Vanilla with pink sugar crystals, Vibrant Green Vanilla and Bold Purple Vanilla with colorful candy bits. 


Last year for my birthday my mom made me a Funfetti birthday cake and while I wasn't so thrilled about turning 30, that cake made me feel like a kid again, with it's brightly speckled sweet interior. In honor of it's 25th birthday, I made something equally fun and delicious and started with everyone's favorite- crispy rice treats amped up with Funfetti cake mix and frosting. These definitely taste just like cake and worthy of a celebration. 


How do you celebrate birthdays? While chatting with my family and fellow baking buddies we've come up with some tips for you on how to maximize your birthday experience. 
  1. Get the kids involved. Let them help in the celebration and planning of the day- from the food, to the decorations to the cake. Not only allow them to make some decisions on their own but let them help you mix the cake mix, hang the streamers and decorate the invitations. Even something as simple as choosing what color candles or balloons to use will make their day. Not only with the celebration be more personal, the kids will be proud of their contributions.
  2. Often times, when there are birthdays, there is pressure to bring a gift. Then you struggle with getting the right gift for the person or how much to spend. Instead, ask your guests not to bring gifts but instead to donate their time, a toy or funds to a charity that means something to your family. If they insist on a gift ask them to provide an experience like a trip to the zoo, or going out for some ice cream rather than a gift wrapped plastic toy. 
  3. Incorporate a craft into the celebration and let that serve as the party favor. Decorate a small wooden frame with non-toxic colorful paints, glue, beads, glitter and jewels. Let the kids craft and socialize. Once the festivities are over, they'll have a handmade keepsake to remember the great day. 

Frosted Funfetti Crispy Rice Treats by Monica h

  • 4 Tablespoons unsalted butter, plus more for dish
  • 10 oz. mini marshmallows
  • 1/2 teaspoon vanilla extract
  • 1/2 cup Pillsbury Funfetti Cake Mix, dry
  • 6 cups crisp rice cereal
  • 1- 15.6 oz. can Pillsbury Funfetti Frosting (any color)
Butter a 9x13-inch dish and set aside. 

In a large pot, melt butter over medium heat. Add marshmallows and vanilla and stir constantly until marshmallows are completely melted. 

Add the dry Pillsbury Funfetti Cake Mix to the marshmallow mixture and stir to combine. Add rice cereal and stir until the mixture comes together and the cereal is well coated. 

Immediately scrape the cereal into the buttered dish and press into an even layer. Allow to cool to room temperature before before frosting. 

Once rice treats are completely cool, frost with Pillsbury Funfetti Frosting and sprinkle the tops with the included sprinkles. 

Cut into squares and serve.

A Classic Recipe With A Twist



The members of the "Lick The Bowl" household are Texas Sheet Cake lovers. Being fans of chocolate cake, cinnamon kissed fudgy icing loaded with homegrown toasted pecans....What's not to love? Well if you're not nut or chocolate fans, then move on, but if you're a sucker for the good stuff like I am, then stick around and pour yourself a glass of icy milk, because I turned the Southern potluck favorite into cupcakes!


Traditionally, a Texas Sheet Cake is baked and served in the same pan. While the cake is still warm from the oven, you pour the molten icing over it and allow it to cool. This gives the icing and the cake ample opportunity to bond and become one with one another as the icing oozes into all the nooks and crannies. It's a good thing, trust me. My version starts off with a simple one-bowl chocolate cupcake then after it's cooled,  gets iced with a rich and sweet cocoa icing loaded with toasted pecans. Allowing the cupcakes and icing to cool a bit before topping them them helps keep the icing intact, rather than sliding off the cupcake and onto the counter.

These cupcakes were rich and decadent, just like the typical sheet cake. All the elements of the classic cake are still there, just in a new and prettier (updated) package, which makes them perfect for gift giving or celebrations. I don't know about you, but I like classic recipes with a twist- it keeps things fresh and exciting. If you're a Texas Sheet Cake fan, I sincerely hope you'll consider whipping up a batch or two and sharing with your loved ones. 



Texas Sheet Cake Cupcakes from Monica h

Chocolate Cupcakes:
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup canola oil
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 2 eggs, lightly beaten
Preheat oven to 350 degrees.  Line cupcake tins with 18 paper liners and set aside.


    In a large bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Using a wire whisk, blend the dry ingredients thoroughly.

      Add the oil, water, vanilla and eggs to the dry ingredients. Whisk until well incorporated and no lumps remain.  

      Evenly divide the batter between the lined cupcakes tins.

        Bake the cupcakes for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 10 minutes; then place them on a rack to cool completely before topping with pecan fudge icing.

        Toasted Pecan Fudge Icing: 
        • 1/2 cup pecans
        • 3 Tablespoons unsalted butter
        • 2 Tablespoons milk
        • 4 teaspoons unsweetened cocoa powder
        • 1/4 teaspoon ground cinnamon, optional
        • 1 1/3 cups powdered sugar, sifted
        • 1/2 teaspoon vanilla extract
        While the oven is still on, place your pecans on a rimmed baking sheet and place in the oven for 10 minutes until the pecans become aromatic and have turned a slight golden brown, being careful not to burn them. 

        Remove from the oven and allow them to cool on the baking sheet. Once cool, chop the pecans and set them aside. 

        In a medium sauce pot, combine butter, milk, cocoa and cinnamon (if using). Stir over low heat until butter is melted. Add powdered sugar 1 cup at a time while continuing to stir until smooth. Stir in vanilla extract and chopped pecans. 

        Take the pan off the heat but leave the icing in the pot. Allow the icing to cool for 15-30 minutes until the pot is cool enough to touch. The icing will thicken as it cools. You want the icing to be thick enough to stay on top of the cupcake but not too thick that it doesn't spread. If your icing becomes hard and too thick to handle, place it back on the stove over low heat and stir until the desired consistency is met. 

        Using a small ice cream scoop, place a small mound on top of each cupcake. The icing will spread slightly and possibly drip down the sides a bit, depending how warm your icing is. Divide evenly over each cupcake. Allow the icing to cool completely and set before enjoying. 

        Store loosely covered at room temperature. 

        Makes 18 cupcakes.

        Hayden's 1st Birthday Party!




        As I mentioned in the last post, we celebrated Hayden's birthday last Saturday with a party at our home. We had friends and family over for food, cake and fun. I'm not big into character themed birthday parties and cakes and since Hayden doesn't have much of an opinion yet regarding these kinds of things, I did what I wanted- and that was simple and classic party food, made pretty. 

        As part of the decoration, Mr. H and I made a photo banner of Hayden, starting with a photo from when he was just hours old all the way up until 12 months. I love it!

        I went for a buffet style setup so everyone could take and eat what they wanted, and used the cake as the centerpiece of the table. Here's what I made: 


        Last November I made a chocolate layer cake for a family friend (Hi Marnie!) and loved that cake so much. It really was one of the best chocolate cakes I've ever had and what sets it apart from others is that it's made with copious amounts of brown sugar. I knew I wanted that cake for Hayden's birthday so, I increased the recipe 1.5x and baked it in two 12-inch pans. I used a double recipe of my favorite cream cheese buttercream for the frosting because I wanted to be able to tint it a soft robin's egg blue. 

        One of my favorite photos from Hayden's party- I love the grin on his face as he feeds Autumn a rice krispie treat!

        I fell in love with the Bunting Banner that Christa from Mini Baker made for a wedding shower cake a few weeks ago. I contacted her and we emailed back and forth and she made a custom birthday banner that read "Happy 1st Hayden" complete with hand painted blue stars. It turned out better than I expected and complimented the cake and decor.         Hayden dug into his cake like a pro. At first it was just fingers in the frosting, then before you knew it he was shoving handfuls of the stuff into his mouth. Then he got to the cake part and started sharing with his Daddy and Autumn and was starting to make a mess on the floor. I don't really know why he started crying, but it was funny. A naked baby covered in cake with teary eyes is enough to make a sucker out of anyone. Silly boy. 

        And lastly here's a picture of the three of us, just after singing Happy Birthday. It was a great day and we're so blessed that we made it through Hayden's first year in tact and without any major injuries, growing better with each passing day. Happy Birthday Hayden, We love you!

        Summery Birthday Cupcakes & A Winner!



        My sweet angel boy Sam would have turned 6 years old this past August 15th. It's hard to believe that that much time has passed. Every year we celebrate by baking him up a cake or cupcakes, and going to the cemetery for a balloon release. This year was no different only Hayden was with us and he sent the balloons up to his big brother. He will always be my first born even if he's not here. And I will always celebrate his life as long as I'm his momma. This year it was with strawberry lemonade cupcakes. 


        Strawberries and lemons just scream summer to me and these were the perfect refreshing treat. They were sweet and tangy, bright and loaded with lemon zest in the cupcake, in the filling and in the buttercream. I found the recipe at Four Points Foodie and adapted it to my liking. I can't say that I've seen a cupcake filled with fresh diced lemony strawberries before so I was definitely intrigued. These were delicious and perfect for celebrating a sixth birthday.

        Strawberry Lemonade Cupcakes adapted from Four Points Foodie

        For The Cupcakes:
        • 1/4 cup (1/2 stick) unsalted butter, room temperature
        • 1/2 cup sugar
        • 1 egg
        • 1/2 tsp vanilla bean paste
        • 3/4 cup flour
        • 1/4 cup milk
        • 1/8 tsp of salt
        • 1/2 tsp baking powder
        • 1 Tbsp fresh lemon juice
        • Zest of 1 lemon
        For The Strawberry Lemon Filling:
        • 1/4 cup diced strawberries
        • 1 1/2 tsp sugar
        • Zest of 1 lemon
        For The Lemon Buttercream:
        • 1/4 cup (1/2 stick) unsalted butter
        • 1 tsp lemon zest
        • 1 cup powdered sugar
        • 2 tsp lemon juice
        For The Cupcakes: Preheat oven to 350 degrees and line 8 cupcake tins with paper cups.  

        In a mixer, cream butter until light and fluffy then add the sugar and mix well. Add the egg and the vanilla  then stir.  Alternately add the flour and the milk, mixing well after each addition. Add the salt and baking powder then scrape down the sides of the bowl. Add the lemon juice and zest then stir well.   

        Scoop into cupcake papers filling no more than 3/4 full. Bake for 20-22 minutes or until a toothpick inserted into the centers comes out clean.  Remove from oven and allow to cool completely on a wire rack. 
        For The Strawberry Filling: In a small bowl, mix the strawberries, lemon zest and the sugar and let sit for 10 minutes.   

        For The Buttercream: In a medium bowl, cream butter until light and fluffy. Add lemon zest then slowly add the powdered sugar til well combined. Mix well then add the lemon juice and beat until fluffy.

        To Assemble The Cupcakes: Cut the center of each cupcake out with a sharp paring knife. Spoon strawberry lemon filling into hole then using a large tip, frost over the filling on each cupcake.   

        NOTE: Makes 8 cupcakes. Recipe can be doubled.
