I mentioned in a recent post about Lemon-Lime Cream Pie, that we were going through cases of oranges from Costco like they were going out of style. They have just been so good this year, and as a midnight snack, Mr. H and I will peel two oranges and have those for dessert. Actually he does the peeling, I just do the eating :-) Our entire crisper drawer was filled to the brim with oranges so I decided to use a few to make this cake. I didn't even make a dent in our stash.
This cake comes from a cookbook I discovered last March called Frame By Frame Baking. It immediately appealed to me because it reminded me of step by step recipe blogs. There are step by step photos and instructions in this book so it's easy to follow along, but it's also visually appealing and the recipes are simple. The book has about 60 recipes sweet and savory recipes in it, and are divided into 4 categories- Cakes and Traybakes, Pastries, Small Cakes and Cookies, and Breads. There really is something for everyone in this book.
I liked this cake, but didn't love it. Firstly, I think I overbaked it a tad even though I followed the directions. It should have been taken out about 5 minutes prior to the time in the book and I have noted that in the recipe below. Because it was overbaked, it was a little on the dry side. Also, when you bake fresh oranges their flavor becomes bitter, like that of orange marmalade. I'm not a fan of orange marmalade but if you are, then you'll like this cake. Despite not loving this recipe, I'm sure there's another in this book with my name written all over it.

Orange Madeira Ring adapted from Frame By Frame Baking
- 3/4 cup unsalted butter, plus more for greasing the pan
- 2 Tbsp. dark corn syrup or Lyle's Golden syrup
- 2medium oranges
- 3/4 cup sugar
- 3 eggs, beaten
- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. finely grated orange zest
- 2-3 Tbsp. orange juice
Preheat oven to 325 degrees F. Grease a tube/ring cake pan and spoon the syrup into the bottom.
Cut all the white peel and pith from the oranges and cut into slices.
Arrange the slices over the syrup in the pan.
Cream together the butter and sugar until pale and fluffy.
Gradually beat in the eggs, beating well after each addition.
Sift the flour into the mixture and fold it in gently with a rubber spatula. Add the orange juice and zest and fold in until a til a soft consistency is achieved.
Spoon the mixture into the pan and smooth the surface.
Bake in a preheated oven for 40-50 minutes or a toothpick inserted in the center comes out clean. Cake should be risen, golden and firm to the touch.
Cool in the pan for 10 minutes, then return out onto a wire rack to cool completely.
The cake can be served cold, or warm with extra corn or Golden syrup drizzled over it.

My favorite cookbook is Seasons by Donna Hay. Here in the Philippines we only have two seasons, the rainy and the dry season. Through the recipes at Seasons by Donna Hay, I get to experience all the 4 seasons that you guys have: Winter, Spring Summer and Fall. Maybe not my 'favorite' to read, but definitely my most used and loved cookbook is one my Mom gave to me when I moved out on my own 27 years ago...Pillsbury Kitchen's Family Cookbook. ♥ It has no binding and barely a cover. Most of the pages are stained and some 'glued' together but I can always rely on it.

That looks like a fabulous cookbook, I would love it! One of my favorite cookbooks is my Hershey's book. It is full of delicious chocolate desserts and I bake from it all the time. I especially love that I can take certain favorites and include them in other recipes, like the dark chocolate topping for the Boston cream pie-I could eat it all day long!

My favorite cook book would have to be a family one. Its this huge hard cover book that has hand written recipes starting from my great-grandmother (and some of the ones she put down were from her mother!) I've gotten to add 4 of my own and can't wait to pass it down :)
I received so many when I was first married (four years ago) because "that's what you give the newly wed." I wish I had hung on to more of them, now that I LOVE to cook.

It's my own family's cookbook, which my VERY large family (my grandmother was one of sixteen children, and then they all had kids!) compiled a few years before my great-grandmother passed away. It's full of good home-food, like my great-grandmother's amazing chicken & potato chip casserole...come to think of it, I haven't made that in awhile...and my own contribution at age six, homemade playdough!

Not a cookbook at all but instead a most excellent reference,picture book for all those tricky ingredients mentioned in cookbooks. Worth its weight in gold!

Back in my teens when I started cooking/baking more on my own, I was quite interested in the Amish, so this was my main book. Hi! My favorite cookbook (currently) is the first one by the guys at the Baked bakery in Brooklyn. It's called Baked: New frontiers in baking. I have made the root beer bundt cake, the german chocolate cake, and the chipotle cheddar biscuits from it, all with great success (even at high altitude, here in CO!) They are on Facebook, and they even write back if you have a recipe question. It's so cool, but the recipes are great.
I have the second book by them, but I haven't had a chance to try anything in it yet. I usually take stuff to my friends at work or wait for a special occasion to bak because, though I love to bake, it's only my husband and me here, and we'd eat everything ourselves (cookies in the freezer have proven that)! :)

My favorite cookbook is an OLD cookbook of my grandma's from her little country church. it's called "Feeding the Flock" and it is choc full of southern recipes made with butter!!! yumm :)

My favorite cookbook is a three ring binder that I complied with many favorite recipes. The recipes are from family, friends, blogs and on line.

it's daniel glukman from Chile (I've written you before by mail), MY Favorite cookbook it's one by an argentinean chef called Narda Lepes (it's in spanish), but she's awesome, it was my first cooking book and it ignited my passion for baking and cooking in general. I recently bought Cook by Jamie Oliver (I adore him), and it's quite a good book. I love cooking books with pictures, that's why I was disappointed with "how to eat" by Nigella Lawson.

Not so much that I expect to win this book, but I gotta tell you-- I just bought Rachael Ray's Look & Cook cookbook and that's a miracle in that I've never liked her cookbooks. This one has GREAT photos and step-by-step. You know how visual I am...not to mention quick dinners for a working girl like me.

Every single recipe I've tried from her books have turned out amazing, you should check them out :)
I love cookbooks so I choose one from my shelf each month and make recipes from that particular cookbook. This month's favorite is Take It Easy by The Deen Brothers. It's a great cookbook, easy on the budget, and has a wide variety of choices. Love your blog!!
My newest favorite cookbook is one of those spiral-bound ones that was done by the Association for Preserving Cape Cod. It is all soups!! How clever!! Makes me want to make soup for supper tonight! Unfortunately, the cookbook is not available for me to buy--I borrowed it from the library. But I copied all the soups I thought I might try, including one that has GIN!! Who knew?!?
I have so many cook books I love that it's hard to pick just one. If I have to, it would be "Aunt Maud's Recipe Book: From the Kitchen of L.M. Montgomery". L.M. Montgomery was an author, best known for The Anne of Green Gables books. She also had a large extended family and was a minister's wife. This book is a collection of her family's recipes and food she served friends and family. My favorite recipe being The Park Corner Cake.

Wow. Wow! This cake looks so amazing. I've been seeing many types of citrus cakes recently, but this is the first one with booze and actual fruit slices...a whole 'nother level. Love it. Happy Anniversary to you and Mr. H =) My favorite cookbook is Authentic Mexican by Rick Bayless. It's well-loved and cherished in my kitchen.
Anything with the clean, fresh smell and taste of citrus is fabulous - the booze...LOL My mouth is watering from those delicious photos too !
My fav cookbooks are the classic Better Homes & Gardens( I have 2 of them, 1 is a soft cover version (14th edition ) and the other is the 3 ring version ( 12th edition ).

Think the first cookbook to rock my world was the (original) Silver Palate Cookbook BUT I have to say I still reach for my very first real cookbook from time to time (and yest it is completely falling apart) The Good Housekeeping Illustrated Cookbook :)

My favorite cookbook is Pure Dessert, by Alice Medrich. I've already made several recipes, and she uses such pure and simple ingredients. Her recipes remind me of Italy or France. Such great things to cook in her book!!!!!

Umm, the cook looks great. We have noticed how great oranges have been this year as well. We have eaten more this year than ever before. One of my favorite cookbooks is Williams-Sonoma Essentials of Baking. I have yet to bake anything from it that did not turn out wonderful!
