Before I tell you about this recipe, I wanted to tell you about Finlandia. They did not ask me to make any specific recipe, nor did they ask me glorify their product. But I do find it necessary to tell you a bit about their product, because I believe it is unique from other cheese makers. Finlandia cheese is the #1 imported cheese in the country. And because they care what goes into the cheese you consume, Finlandia's line of cheeses are also natural, lactose-free and hormone free. Read more here and here. Can you say that about your cheese?
To compliment the Finlandia Gouda cheese, I made a spicy chipotle chicken breast and topped it off with smoky bacon and a slice of Gouda. I got inspiration for the chicken from Maranda of Jolts & Jollies, but I changed things up a bit. It was the tiniest bit sweet, but smoky, spicy and delicious. It paired perfectly with the Gouda, which tasted like a cross between Swiss and Cheddar and the slightest bit sharp. I baked the chicken, but if you'd prefer to grill it or pan fry it or use bone-in chicken, just make the marinade and prepare it the way you wish. To win some Finlandia cheese, scroll down!
Chipotle BBQ Chicken w/ Bacon and Gouda from Monica H inspired by Jolts & Jollies

- 1/8 cup fresh lemon juice
- 2 Tablespoons soy sauce
- 2 Tablespoons honey
- 2 Tablespoons brown sugar
- 1 small tomato, cut into quarters
- 1-2 Tablespoons chipotle chiles in adobo sauce
- 2-3 boneless skinless chicken breasts
In the blender or a food processor, combine the lemon juice, soy sauce, honey, brown sugar, tomato and chipotle peppers and pulse til uniformly blended.
In a bowl or ziploc bag, add chicken and half of the marinade, coating the chicken thoroughly. Allow to stand at room temperature for 10 minutes.
Place marinated chicken in greased Pyrex pan; discarding used marinade.
Bake chicken at 375 degrees F for 35-40 minutes, basting with fresh marinade every 10-15 minutes. Bake til internal temperature reads 160 degrees on a meat thermometer.
The last 5 minutes of cooking, add cooked bacon slices and Finlandia Gouda or Cheddar cheese to the top of the chicken breasts. Bake til cheese is melted. Remove from oven.
Allow chicken to rest for about 5 minutes before serving.

Sounds yummy! I have to admit I shuddered when I saw the picture of the can of chipotles in adobo. My daughter, during a tantrum in the grocery store (because I wouldn't let her ride standing up) took the exact same can out of the shopping cart and threw it at my foot. My poor toe was gushing blood, and it's still healing six weeks later. Despite that event, I still love chipotles!
I will take the Havarti, greatest cheese of all time. I will make some dory of mushroom and havarti Quesadilla...with a decadent sauce!
i would have to get some of the swiss for my husband's favorite chicken cordon bleu, but then maybe some of the double gloucester for me!
I would love to try their muenster and Swiss! I would go for some stacked grilled sandwiches including caramelized onions, bacon, roast beef and grilled red bell peppers. MMMM!

I always buy hormone free cheese, so important to me. I will try this the next time I go to my Cub. Deli cheese hardly ever has the cheap potato starches in it too, gonna check it out!
I love cheese..... I don't believe there is a cheese that I've tried that I didn't like. I would go with the Gouda and the Muenster cheese. I would make a classic grill cheese sandwich using both cheeses or either I would just put it on some crackers...

Hmmm I'm always greedy to try everything - so I'd go with the Deli Best Collection. I'd make grilled ham and cheese with the swiss - and raspberry dipping sauce to go with it. Havarti I'd eat by the slice - and the Cheddar and Gouda slices would go in my daughter's lunches with lunch meat and crackers. :)
The chicken looked great. Do you ever do Montery Chicken? Seems like it'd be a natural for this cheese - a little barbq, a little bacon, a little cheese. . . YUM!

My daughter-in-law was just diagnosed as being lactose intolerant and she loves cheese as much as I do. So it is wonderful to know that Finlandia's cheeses are lactose free. We have always enjoyed their light swiss, but I'd love to try to double Gloucester and make my daughter-in-law a grilled cheese sandwich!
