This is not really a post with recipes. I just wanted to show you the sandwiches that we've eaten recently that we've really enjoyed. It's so hot out and there are nights that I don't want to turn the oven on so we turn to sandwiches. Besides them being easy to whip up, they're totally quick and customisable and they're good for lunch or dinner.
Both of these sandwiches are served on OroWeat OatNut Bread. This first sandwich is lightly toasted bread then slathered with Hellman's mayo on each slice of bread. On one slice I added a handful of sweet baby greens, 2 slices of crisp bacon, cut in half, then one hard boiled egg, sliced and seasoned with salt and pepper. A spoonful of garlic pesto tops the remaining slice of bread. We had these again for dinner last night so I had to share them with you- so good!

The second sandwich was a result of a craving. What else is new? It's basically a BLT sandwich with a cornmeal crusted Fried Green Tomato in place of the red tomato slices. Toasted bread with a slather of mayo, sweet baby greens, 2 slices of crisp bacon, 2 slices of fried green tomatoes. I coated the tomato slices with buttermilk and spices (salt, garlic powder and cayenne pepper) then dipped them in seasoned cornmeal then pan fried them til golden. We served these with a side of even more fried green tomatoes and ranch dressing. yes, ma'am.
These are our favorite sandwiches right now, besides the usual turkey/cheddar or gooey grilled muenster cheese. Of course we can't forget about the fried egg topped ham and cheese or the Cuban sandwich or the egg salad sandwich either!

ReplyDeleteI love sandwiches too! They're great for a busy evening and everyone is still happy...especially me, without any dishes to clean except a few knives. I always go back to a good turkey sandwich with some smoked gouda or gruyere with tons of baby spinach on some hearty wheat bread or ciabatta. Yum!

ReplyDelete- Toasted white bread (2 slices), one toped with mushed avocado, a little bit of salt, then you put some chopped broiled or broth cooked chicken breast, some mayo, pickles and you top it with the other half of bread... delicious!!
- The other is what we call churrasco, a typical chilean sandwich: very thin cut meat, stir fried on a pan (just with a liiitlee bit of oil, salt and pepper), mushed avocado, tomato slices, sour curt (optional), mayo, ketchup, mustard (all of those are options), all that served on a toasted bun, a a whole wheat bread or better on a cibatta bread.

I have to admit, I don't make a lot of sandwiches at home (I'm too lazy to drag out all the fixings I guess) but I love to go out to lunch and have a really good sandwich.When I do make one myself I love oven roasted turkey, bacon, provolone, tomato, lettuce, and really thin sliced red onion on whole grain bread with a bit of mayo (mixed with chopped basil). Yum!!

ReplyDeleteThose look fantastic! Since I started trying to eat mostly vegan, sandwiches are something I've really missed. But one of my favorites has to be tomato, basil and mozzarella on a fresh baguette with a drizzle of balsamic... yum!

Sweet & Savory- I used a store bought locally made pesto for these sandwiches. No recipe, sorry!

Summer and sandwiches go together like love and marriage! You posted kind words on the loss of our dalmatian, Argos. Just want you to know that we have a new boy, Oliver. ReplyDeleteThis may sound weird, but a fave sandwich of mine has sprouts, sweet purple onion, guacamole and salted cashews (pressed into the guacamole) on whole wheat bread. Sometimes I add lettuce and tomato too. It sounds weird but its great! I just by the packaged Avo guac in the produce section to make it quick.
Also, I was the one who had emailed you about the spring form pan and the lemon chiffon cake. Well I never got around to making it. My dad passed away (not unexpectedly) at Easter. So its still on my to-do list. Thanks so much for the tips! Love this blog!

Does a breakfast sandwich count? If so my Dad's. He makes me a VERY thin omelet (for me), like crepe thin and then tops my sliced white bread with it and lots of crispy bacon, YUM-O!

It was record hot yesterday - so we tried these - with a BLT flare, the Teens and I enjoyed these, that now I have to get more eggs hardboiled! I have to say the Pesto spread was a huge hit for me over the regular mayo! Thank you for the "BELT sammie" as my 14 yo son put it.. Bacon, Egg, Lettuce, Tomato.
