Super Bowl Eats- Take 2!

Last year around Super Bowl time I posted baked corn dogs. I thought they were neat and clever and they served a crowd. But I didn't really like the corn bread all that much and by the time it baked all the way through it was a little dry. Now I've tried MANY different recipes for cornbread and I still think Jiffy Cornbread is still the best. You can argue with me and swear by your recipe (and I've tried a few of those too) but I still like Jiffy. And at 35 cents a box, I'm okay with that :-)

So I originally thought I would take that pan of baked corn dogs and use Jiffy instead but then I saw that Coleen of Coleen's Recipes made corn bread muffins and I thought "duh!". Why didn't I think of that? Actually it was her genius daughter that came up with them first so ever since seeing them last summer I have made them. I made them every few weeks when I actually have hot dogs in the house- which is not that often. I like to buy Hebrew National.

So anyway, we love these and they are so simple to make. I like them with some mustard and ketchup and a spoonful of dill pickle relish. Mr. H likes to top his with chili. Each box of muffins mix makes about 7 muffins but it's easy to double or triple this recipe. They would be awesome this weekend at your Super Bowl party. Go Cowboys! Oh wait, who's playing?

Baked Corn Dog Muffins inspired by Coleen
  • 1 box Jiffy Corn Bread Mix (plus milk and egg as directed on box)
  • Hot Dogs (2-3) or Kielbasa Sausage
  • Grated Cheddar Cheese

Make corn bread mix according to the package instructions and set aside. Spray 7 openings of a muffin tin with nonstick spray and set aside. Chop hot dogs into 3rd (about 1 1/2-2 inch pieces).

Place a tablespoon or two of the cornbread mix into greased muffin tins. Add a piece of the hot dog and a sprinkling of cheese. Top with more corn bread mix filling each tin about 2/3 of the way full. Sprinkle with a little more cheese.

Bake in a preheated 400F oven for 15-20minutes or until lightly golden on the edges. Let cool for a few minutes before removing from tin. Serve with condiments of your choice such as ketchup, mustard, chili, cheese or relish.

Use whatever toppings you like on your corn dogs or hot dogs and let the kids have fun!

  1. Yeah, I love Jiffy, too. I still like the cornbread recipe I have (just add some more sugar, and it'll be like Jiffy or better) for special occasions. These baked corn dogs are too cute!! I like the fact that they aren't fried!

  2. I swear by Jiffy... and I love corn muffins (when I'm making "plain" corn bread, I add a can of diced chilis and a can of creamed corn to the recipe. You have to cook them longer, but soooo moist!!)

    But back to this recipe... man oh man, did I pick the wrong week to go back on Weight Watchers. I love corn dogs like nobody's business. Unfortunately, my boys are not fans (I know, right?). I'd love to make these for our Superbowl party, but I'm afraid I'd eat them all. Bookmarking this page for a splurge day. Thanks!!

  3. I posted my recipe for cornbread today. And after reading this, I know exactly what I'm going to make for SuperBowl Sunday! I can't believe they're not fried! The stores here sell cocktail size hotdogs that will be perfect for this recipe. Thank you! :D

  4. Jiffy is our pick too. I have a couple of really good homemade cornbread (dolled up a bit) recipes, but we almost always use Jiffy.

    I wish I'd had this recipe when my kids were still home. Hubby won't touch a hotdog...but, I'd love this.

  5. I love corn dogs, and I love that it isn't fried. I bet those mini weenies would be great in here too. I use Jiffy all the time for my 2-Corn Casserole. Hubby once commented on the 8 boxes in the cupboard!

  7. I love Jiffy Cornbread mix, too. But I like them a little bit more moist than they usually turn out. So I've started to add 1/3 cup of lite sour cream to the mixture... and they turn out yummy and moist every time!

  12. I agree with you on jiffy. I have tried a bunch of homemade cornbread recipes and I haven't found one that tastes as good and is as easy/cheap as jiffy.
    My kids would love these!

  21. Corn bread is one of those southern things I'm not so sure about. Adding a hotdog even more so. :)

    They are VERY cool looking and I can see kids liking them. I'll have to ask my gang and show them your photos. (the danger in that is they could come here and expect much more than just the corn dogs! :))

  23. Genius, girlfriend! Hebrew National is my favorite dog, too. I don't eat them often, and I do love corn dogs (or is it corny dogs in Texas?) What a clever idea. BTW, I like Jiffy CB mix... but me, being a self-proclaimed scratch baker... well, I'll sneak it in once in a while.

    Because I live in England I couldn't find the Jiffy Corn Bread Mix so I used a recipe of cornbread from Martha Stewart site and it turned out great!!!!

  28. Oh my gosh -- I am SO going to make these!!!!!!!! I love corndogs and this is such a great idea. I may even use little smokies at some point, but I'll try the hot dogs first. I'm a Jiffy Cornbread Mix fan myself and that is ALL I use. I love that little touch of sweetness. :)

    Oh yes, GO COWBOYS! I live in Cedar Hill and have always been a Cowboys fan. :O)

  42. OMG, Yum! I made these tonight, but I had Quaker Yellow Corn Meal and it tasted just like the corndogs we eat at our county fair, baked not fried. My 4 1/2 year old loved them! I will definitely be making these again! I think I'll be adding more hot dog pieces though. <3

    I made these but baked them in the mini muffin pans with a smaller piece of hotdog. Mini corn dog bites..wallah! Kids and adults both were crazy about them, these were gone before anything else was touched at our last birthday party!
