Need A Recipe!

A blog reader of mine, named Betty, emails me occasionally and sends me recipes to try out. Sometimes she send me pictures but mostly just funny stories abou ther life in Maine. She does not have a blog but she has a request for me that I cannot fill. That's where you come in :-)

She's looking for a DELICIOUS- "This is so good I'll have to make it again" kind of recipe. Folks, she's looking for a Chocolate Pound Cake. If you have one that fits this description please help me help her out. Leave a comment and link to it, or email me the recipe.

  1. Here is the recipe my family uses.
    1 1/2 cups butter, softened
    3 cups white sugar
    5 eggs
    2 teaspoons vanilla extract
    2 teaspoons instant coffee granules dissolved in 1/4 cup hot water
    1 cup buttermilk
    2 cups all-purpose flour
    3/4 cup unsweetened cocoa powder 1/2 teaspoon baking powder
    1 teaspoon salt

    Preheat oven to 325 degrees. Grease and flour a 10 inch Bundt pan. Mix together the flour, cocoa, baking powder, and salt. Set aside.
    In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the dissolved coffee and buttermilk. Pour batter into prepared pan.
    Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 20 minutes, then turn out onto a wire rack and cool completely.

    I think adding some espresso or coffee granules would enhance the chocolate flavor. Good luck on your search!

    Memoria- I don't watch that show either but I did turn on the tube and she was making that cake- weird coincidence, huh? It looked great but it didn't get such great reviews.

    Leslie- I do have that book and I was going to check in it and I forgot. Thanks for reminding me :-)
