Grandma's Chocolate Cake

This is my grandma's all-time favorite cake. It's one of the first cakes I ever baked and it comes from my favorite tattered, photo-less, cookbook, Favorite Recipes For Our Friends. It's the same cookbook that my Chocolate Zucchini Bundt Cake and the Strawberry Cake come from. So you know it's good.

I made this for her birthday last year as I do every year she's in town. She lives 9 hours away so I don't see her as often as I'd like to. But when she's in town she says "are you going to make me my chocolate cake?". She's already claimed it her own and rightfully so because she's the only one I make it for :-)

Well her birthday is tomorrow and though I won't be seeing her on her birthday this year I will be thinking of her and wishing her a slice of cake. Grandma I love you!

Melt In Your Mouth Chocolate Cake
  • 2 cups flour
  • 2 cups sugar
  • 1/4 cup cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 tsp. vanilla

Mix all ingredients well except water and vanilla. Then add them and mix. Batter will be thin.

Pour into 3 greased and floured 8 or 9-inch cake pans.

Bake at 350 degrees for 30-35 minutes.

Chocolate Cream Cheese Frosting

  • 8 0z. cream cheese, room temp.
  • 1 Tbsp. milk
  • 4 cups powdered sugar, sifted
  • 3- 1 oz. squares unsweetened chocolate, melted
  • 1 tsp. vanilla
  • 1/8 tsp. salt

Mix cream cheese and milk together. Gradually blend in sifted powdered sugar. Add melted chocolate, stir well then add vanilla and salt.

    I'm going to try your chocolate cake recipe, 2 weeks ago, I tried to make a chocolate cake that I read from a baking book, guess what? my chocolate cake was sinking! LOL

  17. I hope your grandmother has a very happy birthday. I love reading the stories behind family recipes. This cake looks sinfully delicious and I for one will be making it this weekend. I've made cream cheese frosting for years and never thought to add chocolate!

  22. I have so missed you, Monica! How I wish I could solo the entire cake you've made here. Chocolate is my go-to when I'm stressed out, and this would help me to feel better. Instead, I will just close my eyes and visualize how yummy this is. So nice to see your family in one shot!
